Method

Make it happen

  1. 01

Heat vegetable oil in a large deep lidded pot; brown any raw meat or tofu in the pot if indicated, setting it aside briefly if needed.

  2. 02

Soften onion for 5 minutes then cook garlic, ginger and ground spices for 1 minute, stirring to prevent burning.

  3. 03

    Soften courgette with onion.

  4. 04

Add the rinsed uncooked rice, coconut milk and measured water; stir once to combine and bring to a gentle simmer.

  5. 05

Cover and cook over very low heat for 12 minutes, keeping the pot at a gentle simmer.

  6. 06

Add salmon on top for the last 8–10 minutes of covered cooking until opaque.

  7. 07

Continue covered for 5–8 minutes until the rice is tender; add a splash of water if the liquid evaporates too soon.

  8. 08

    Finish with lime.

  9. 09

Rest off the heat for 5 minutes; make sure chicken, turkey and mince are fully cooked and fish and prawns are opaque throughout, fluff and serve.
