Make it happen

Heat oven to 180°C fan. Grease a 12-hole muffin tin or line with paper muffin cases.

Whisk eggs, milk and oil in one bowl, and stir flour, cheddar, oregano, salt and pepper in another.

Stir drained sweetcorn and well-squeezed grated courgette into the dry ingredients.

Fold wet ingredients into dry with prepared additions just until combined.

Divide among muffin holes and bake for 20–22 minutes until risen and a skewer comes out clean; cool briefly and serve three per person.
