Tuna and Sweetcorn Jacket Potatoes

Make it happen

1. 01

   Heat the oven to 200°C fan. Scrub and dry the potatoes, prick with a fork, rub with oil and salt and bake on a tray for 55–65 minutes until crisp outside and soft inside.

   While potatoes bake, make the topping.

   Mix drained tuna, sweetcorn and lemon juice, adding 2 tbsp of the dressing yoghurt to bind.

   Split the cooked potatoes, fluff the middles with a fork and divide the topping among them.

   Finish with yoghurt, spring onion and black pepper; serve while hot.
